Fried Potatoes with Brawn and Raw Vegetables

The perfect fried potatoes with brawn and raw vegetables recipe with a picture and simple step-by-step instructions.

For the fried potatoes

  • 500 g Potatoes
  • 1 Onion
  • 50 g Ham cubes
  • Salt
  • Pepper
  • Hot paprika powder
  • Dried oregano
  • Dried thyme
  • Clarified butter

Aside from that ….

  • 2 Discs Brawn
  • Remoulade

For the raw food

  • Carrots
  • Celery
  • 4 tbsp Oil
  • 4 tbsp Vinegar
  • Salt
  • Pepper
  • 1 pinch Sugar
  1. Boil the potatoes, leave to cool, peel and cut into slices.
  2. Peel the onions and put them in a pan with hot clarified butter with the potatoes and ham, season with salt, pepper, paprika, oregano and thyme and fry until crispy brown while turning several times.
  3. Finely grate the carrots and celery and add a pinch of sugar, salt and pepper with 2 tablespoons of oil and 2 tablespoons of vinegar each and let it steep.
  4. Arrange the fried potatoes with the jellied meat, tartar sauce, grated carrots and celery on a plate and serve.
