Fried Potatoes with Brawn and Raw Vegetables
The perfect fried potatoes with brawn and raw vegetables recipe with a picture and simple step-by-step instructions.
For the fried potatoes
- 500 g Potatoes
- 1 Onion
- 50 g Ham cubes
- Salt
- Pepper
- Hot paprika powder
- Dried oregano
- Dried thyme
- Clarified butter
Aside from that ….
- 2 Discs Brawn
- Remoulade
For the raw food
- Carrots
- Celery
- 4 tbsp Oil
- 4 tbsp Vinegar
- Salt
- Pepper
- 1 pinch Sugar
- Boil the potatoes, leave to cool, peel and cut into slices.
- Peel the onions and put them in a pan with hot clarified butter with the potatoes and ham, season with salt, pepper, paprika, oregano and thyme and fry until crispy brown while turning several times.
- Finely grate the carrots and celery and add a pinch of sugar, salt and pepper with 2 tablespoons of oil and 2 tablespoons of vinegar each and let it steep.
- Arrange the fried potatoes with the jellied meat, tartar sauce, grated carrots and celery on a plate and serve.
