Fried potatoes with fresh herbs

Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 1 large onion(s), red
  • 2 cloves garlic
  • 5 sprigs of thyme
  • 3 sprigs rosemary
  • some lovage, tastes quite intense, so use sparingly at first
  • 10 sprigs of parsley
  • Salt
  • Pepper, from the mill
  • some nutmeg
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

simple, quick, fresh and the best I’ve ever eaten

I’m sharing with you the recipe for the best fried potatoes I’ve ever made. Peel the potatoes, halve the large ones, and slice them. Boil the potatoes in a pot with salted water for 15 minutes. While the potatoes are cooking, dice the onions, finely chop the garlic, and prepare the herbs. Drain the potatoes. Heat the olive oil in a pan, add the cooked potatoes and onions. As soon as the onions are translucent, add the thyme and rosemary. When the potatoes are starting to brown, add the garlic and lovage, and season with salt, pepper, and nutmeg. Continue frying until the potatoes have reached the desired color, then add the parsley to finish.
