Fried salami and onion cubes and tortellini salad with buttermilk crème fraîche mustard dressing

Ingredients for 2 servings:

  • 400 g tortellini with cheese filling
  • 2 onions, red
  • 200 g salami in one piece
  • ½ tsp sea salt
  • 250 g buttermilk
  • 100 g crème fraîche with herbs
  • 30 g spirit vinegar
  • 30 g mustard, medium hot
  • 30 g honey
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Combine all the other ingredients for the dressing, except for the salt and pepper. Season to taste with salt and pepper. Cook the tortellini according to the package instructions, then drain. Transfer to a bowl and toss with the dressing, then set aside. Peel the onions and dice them along with the salami. Sauté both for about 5 minutes, adding salt just before the end of cooking and tossing to combine. Then arrange the tortellini salad on the side and serve.
