Fried salmon fillet with spring onion, dill, horseradish and apple sauce

Ingredients for 3 servings:

  • 3 salmon fillets (approx. 150 g each)
  • 1 tbsp oil
  • ½ bunch of spring onions
  • ½ small apple
  • 1 tbsp oil
  • 100 ml cream
  • 100 ml vegetable broth or fish stock
  • 100 ml milk or white wine
  • 1 tsp mustard
  • 1 tsp horseradish, preferably freshly grated
  • 2 dashes lime juice, freshly squeezed
  • salt and pepper
  • Herbs, freshly chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash and slice the spring onions. Wash, quarter, and dice the apple. Briefly fry the salmon fillet in oil on both sides. In another pan, sauté the spring onions and apple in oil. Pour in the cream, broth, and milk. Add the mustard, horseradish, and lime juice. Simmer and season to taste. Serve the sauce first, then the fish. Sprinkle with herbs and serve. Serve with a side of potatoes.
