Fries with feta

Ingredients for 2 servings:

  • 1 kg potatoes, floury
  • 6 tbsp sunflower oil
  • 4 tbsp olive oil
  • 4 garlic cloves
  • 2 tsp oregano, dried
  • 1 tsp rosemary needles
  • 2 tbsp thyme leaves
  • 150 g feta cheese
  • some sea salt flakes
  • 1 shot of vinegar
  • 1 tsp pepper
  • 1 tsp chili flakes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Preheat the oven to 220°C fan/convection oven. Wash the potatoes and, without peeling them, cut them into 2 cm thick fries. Bring a large pot of salted water to a boil and add a generous splash of vinegar. Cook the fries for about 7-8 minutes. Drain in a colander and set aside to dry for 5 minutes. Then, toss the fries in a bowl with the sunflower oil, sea salt flakes, thyme, chili, and finely chopped rosemary. Spread the fries and oil on a baking sheet lined with baking paper. They shouldn’t be too close together. Bake in the preheated oven on the middle shelf for about 45 minutes, turning occasionally. About 5 minutes before the fries are done, heat the sliced ​​garlic with the olive oil in a small saucepan until the garlic is golden brown. Remove the fries from the oven and baste with the olive oil and garlic mixture. Return to the oven for about 4 more minutes. Then transfer to a bowl. Sprinkle with crumbled feta and oregano and serve immediately.
