Delicious – not just at Christmas time

Cream the butter or margarine until fluffy, then add the sugar and vanilla sugar, a spoonful at a time, and then the egg yolk. Sift the flour and gradually whisk in until fluffy. Finally, knead the dough and form two rolls about 3 cm in diameter. Brush with the egg white and roll in chopped almonds and coarse sugar. Chill the rolls for about 1 hour to allow them to set. Then, carefully cut the rolls into approximately 1/2 cm thick slices using a sharp knife. Place them on an ungreased or parchment-lined baking sheet and bake in a preheated oven until golden brown. Baking: Electric oven: about 8 minutes at 225°C. Gas oven: about 8 minutes at mark 4 or 1/2 high heat.
