Frosted lime muffins

Ingredients for 1 servings:

  • 165 g butter biscuits
  • 100 ml butter
  • 2 tsp maple syrup
  • 250 g cream cheese
  • 400 ml condensed milk, sweetened
  • 1 organic lime(s)
  • 180 ml lime juice
  • 1 tsp cinnamon powder

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Makes 6: Place the cookies in a mixing bowl and blend until smooth. (Alternatively, crush the cookies in a freezer bag.) Add the melted butter and maple syrup and blend briefly again. Then stir in the cinnamon powder. Mix the cream cheese and condensed milk with a hand mixer. Finely grate the lime zest. Mix in most of the lime zest and the lime juice. Line a muffin tin with paper cases and fill them 3/4 full with the cream. Sprinkle the cookie crumbs on top to form a base, cover the tin and place in the freezer for 4 hours. Remove the muffins from the tins before serving, top with the remaining lime zest, and eat quickly.
