Fruit bread made from quark and oil dough

Ingredients for 22 servings:

  • 125 g dried apricot(s)
  • 125 g plum(s), dried
  • 125 g date(s), dried
  • 125 g pineapple, dried
  • 250 g quark (low-fat quark)
  • 150 g sugar
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 8 tbsp oil
  • 4 tbsp milk
  • 500 g flour
  • 1 tbsp baking powder
  • 200 g apricot jam

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly chop the dried fruit. Combine the quark, sugar, vanilla sugar, salt, eggs, oil, and milk in a bowl and mix. Combine the flour and baking powder, then stir in portions of the quark and oil mixture. Finally, knead in the dried fruit, except for about 4 tablespoons (for decoration). Knead the dough with your hands on a lightly floured surface until smooth. Grease a loaf pan (approx. 37 cm long). Pour the dough into the pan. Bake in a preheated oven at approx. 180°C (convection oven approx. 160°C) for approx. 1 hour. Allow to cool slightly. Warm the jam and strain it through a sieve. Spread it over the bread and decorate with the remaining dried fruit.
