Ingredients for 4 servings:

  • 400 g quark (curd), 20%
  • 100 g cornstarch
  • 4 eggs
  • 100 g powdered sugar
  • 40 ml milk
  • 250 g berries (fresh or frozen) and some sugar or compote

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Light summer dish

Separate the eggs and beat the egg whites until stiff peaks form. Whisk the egg yolks with the sugar until frothy, then stir in the curd, milk, and cornstarch. Finally, fold in the beaten egg whites. In a non-stick frying pan, bake 4 golden-brown omelets one after the other in the oven without fat, filling each with sugared berries or compote.
