Ingredients for 1 servings:
- 100 g double cream cheese
- 2 tbsp sugar
- 250 g flour
- 3 tbsp baking powder
- 1 tsp baking soda
- 1 egg(s)
- 100 g sugar
- 80 ml oil
- 200 ml milk
- 50 g desiccated coconut or almonds, ground
- Jam, e.g. raspberry
- powdered sugar
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Muffins with jam and cream cheese filling
Mix the cream cheese with the sugar. Mix the flour with the baking powder and baking soda. Whisk together the egg, sugar, oil, and milk. Gently mix the egg mixture with the flour mixture. Grease the muffin cups and sprinkle with desiccated coconut or ground almonds. Fill the cups 1/3 full with batter and top each with 1 teaspoon of cream cheese filling and jam. Cover with the remaining batter. Bake in a preheated oven at 175°C for 25-30 minutes. Let cool and sprinkle with powdered sugar.
