Fruity pecan bread, low carb

Ingredients for 1 servings:

  • 200 g ready-made mix of seeds and dried fruits, e.g., “Bio Topping” from the drugstore, see instructions
  • 100 g pecans
  • 50 g sunflower seeds
  • 50 g flaxseed meal
  • 2 tbsp chia seeds
  • 2 tbsp psyllium husks
  • 1 packet of baking powder
  • 1 tsp, leveled salt
  • 500 g quark
  • 3 m.-sized eggs

Working time approx. 10 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 5 minutes

The mixture of seeds and dried fruits can, of course, also be mixed at home and consists of golden linseed, quinoa flakes, chia seeds, crushed pumpkin seeds, date pieces, goji berries, hemp seeds, fig pieces, and rice flour. Preheat the oven to 200°C. Line a baking pan with parchment paper. Crush the pecans in a mortar and pestle. Mix the dry ingredients with the salt and baking powder, then add the quark and eggs and whisk. Pour the resulting mixture into the baking pan. Bake the bread in the pan for 40 minutes, then remove and bake for another 15 minutes without the pan.
