- 150 g sugar

- 100 g sea salt

Peel the oranges and lemons thinly using a vegetable peeler. Heat water with the sugar, then add the peels to the water and bring to a boil. Reduce the liquid (10-12 minutes) until it reaches a syrupy consistency. Remove the peels from the syrup and drain well. Line a baking sheet with baking paper and lightly brush with olive oil. Spread the citrus peels on top and dry in an oven at 80°C for 3 hours. Blend the dried peels in a food processor until a fine powder forms. Layer the lemon and orange powder with the salt in small, sealable jars. This mixture lends a fruity freshness, especially to fish, shellfish, and salads.
