Ingredients for 4 servings:
- 1 small onion(s), red
- 4 limes
- 2 small papayas, ripe
- 2 red bell peppers
- 4 grapefruits
- 6 oranges
- 1 sprig of mint
- 1 tbsp brown sugar
- 1 tsp mustard
- 1 tsp cardamom
- 100 ml oil
- Cayenne pepper
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
with mint and cardamom dressing
Finely slice the onion. Peel the bell peppers and cut into thin strips. Carefully fillet 4 oranges, 4 grapefruits, and 2 limes. Halve the peeled papayas, remove the seeds, and cut into bite-sized pieces. Gently mix everything. Wash the mint. Purée the mint leaves with the juice of 2 limes and 2 oranges, sugar, mustard, cardamom, and a pinch of cayenne pepper. Stir in a little oil as you go. Season the dressing with salt and pepper and add to the salad.
