Ingredients for 6 servings:
- 1 portion of dough for galettes, in my recipes
- 2 bulb(s), approx.
- 180 g Brie(s) or Camembert
- 12 slice(s) ham, thin slices
- n. B. Walnut halves, approx. 12 – 18 pieces
- Fleur de Sel or other salt
- Pepper from the mill
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Prepare the batter according to the basic recipe. Cut the cheese into thin slices, roughly tear the ham slices, and break the walnut halves into pieces. Quarter the pears lengthwise, remove the cores, and cut the quarters crosswise into thin slices. For each pancake, heat about 1 tablespoon of butter in a large non-stick pan, add 1 ladleful of batter, and swirl to spread. Spread about 30g of cheese, about 2 slices of ham, 1/4 of a pear, and 2-3 walnut halves over the batter, leaving a 2-3 finger-wide border all around. Sprinkle with salt and freshly ground pepper to taste. When the batter has set and is starting to brown and crisp on the back, fold the edges on all 4 sides towards the center and briefly press down with a spatula.
