Garlic – Herb – Croutons

Ingredients for 4 servings:

  • 6 slices of toast, lightly toasted
  • 1 pack of mixed herbs (frozen), e.g. 8-herb mixture
  • 200 ml olive oil
  • 2 clove(s) garlic, squeezed
  • Salt
  • pepper

Instructions

Preheat oven to 200°C (top/bottom heat), or 180°C (fan oven). Peel and press the garlic, and place it in a bowl. Add the olive oil, salt, pepper, and herbs, and stir everything together. If the mixture seems too thick, add a little more olive oil. Stack the slices of bread and cut them into cubes (this is easier if the bread has been toasted a little. You can also trim the crust, but I never do this). Place the bread cubes in the bowl and stir very carefully with a spoon until all the cubes are coated with the oil mixture. Then place the bread cubes on an uncoated baking sheet and place in the oven. Bake for about 15 minutes, turning occasionally. Once the cubes are golden brown, let them cool on a kitchen towel or paper towel. After 10 minutes, they will be nice and crispy and go particularly well with a Caesar salad, for example. Note: I also tried using a baking tray lined with baking paper, but unfortunately the croutons didn’t get very crispy.
