Garlic soup

Ingredients for 4 servings:

  • 40 g butter
  • 30 g flour
  • 50 g onion(s)
  • 750 ml beef stock or vegetable stock
  • 200 ml cream
  • 100 g garlic, finely chopped
  • 50 g crème fraîche
  • salt and pepper
  • 50 g white bread, diced
  • 20 g butter
  • flat-leaf parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely dice the onions, then sauté them in a pan with butter. Dust with flour and stir until smooth. Add the garlic, pour in the stock, and stir well. Let it simmer for about ten minutes. Then add the cream and season with salt and pepper. Bring back to a boil and finish with crème fraîche. Toast the white bread cubes in a pan. Serve the soup and garnish with toasted white bread cubes and flat-leaf parsley.
