Gausi's Bailey's Cinnamon Muffins

Ingredients for 1 servings:

  • 260 g flour, type 405
  • 1 packet of baking powder
  • 2 tsp cinnamon
  • 2 eggs
  • 125 g butter, soft
  • 90 g sugar
  • 250 ml Baileys Irish Cream
  • 12 half walnuts
  • 2 tbsp powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C. Sift the flour into a bowl and mix well with the baking powder and cinnamon. Beat the eggs and sugar in a mixing bowl with a hand mixer until very fluffy, at least 5 minutes, then gradually add the butter while stirring. Add the Baileys and mix well. Now add the flour mixture to the egg mixture and beat again for at least 5 minutes. Grease a muffin tin well with butter and fill the holes two-thirds full with batter. Place half a walnut on top of each batter. Bake for 20-25 minutes until golden brown. Remove the muffins from the oven and let them rest in the tin for another 5 minutes. Turn them out of the tin and let them cool on a wire rack. Sprinkle with powdered sugar. Tip: The fluffiness of the finished muffins depends on how well you mix the foam mixture and later the entire batter! So it’s better to mix for longer than too little, or to use a food processor.
