Ingredients for 12 servings:
- 260 g flour, type 405
- 1 packet of baking powder
- 1 pinch of salt
- 2 m.-large orange(s), untreated
- 110 g sugar
- 1 egg(s)
- 125 g butter, soft
- 6 cl Grand Marnier
- Walnuts
- powdered sugar
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Preheat the oven to 180°C. Sift the flour into a bowl and mix well with the baking powder and salt. Grate the zest from the well-cleaned oranges, peel them, cut them into pieces, and puree them with a hand blender. Beat the eggs and sugar in a mixing bowl with a hand mixer until very frothy, at least 5 minutes, then gradually add the butter while stirring. Add the orange juice, pureed orange, Grand Marnier, and the sifted flour mixture to the egg mixture and mix until smooth. Grease a muffin tin well with butter and fill the holes two-thirds full with batter. Place half a walnut on top of each batter. Bake for 20-25 minutes until golden brown. Remove the muffins from the oven and let them rest in the tin for another 5 minutes. Turn them out of the tin and let them cool on a wire rack. Sprinkle with powdered sugar. Tip: The fluffiness of the finished muffins depends on how you mix the foam mixture and later the entire batter! So it’s better to mix for longer than too little, or to resort to using a food processor.
