Ingredients for 4 servings:
- 1 kg potatoes
- 750 g apples
- 100 ml milk
- 2 onions
- 2 tbsp vegetable fat
- 100 g ham, mildly smoked
- 1 pinch of nutmeg
- 4 pieces of black pudding or panhas
- salt and pepper
- possibly vegetable broth, instant

Wash, peel and dice the potatoes and cook in salted water, possibly with 1 to 2 teaspoons of vegetable soup powder. Wash and peel the apples, remove the cores and also dice them. Heat the fat in a pan, sauté the sliced onions and the very roughly chopped ham. Add the apples and sauté until the apple pieces can be mashed. Carefully season with nutmeg, salt and pepper. Drain the potatoes and add the milk and mash to a puree. Fry the black pudding or panhas in the pan on both sides. Place a portion of the mash on the plate and divide it in half, filling between the halves with the onions, ham and apple sauce. Decorate the black pudding or panhas on the side.
