Ginger-lemon soda

Ingredients for 1 servings:

  • 100 g ginger
  • 250 g sugar
  • 150 g honey
  • 120 ml lemon juice
  • 4 g dry yeast
  • 2 ¾ liters of water

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 1 hour; Total time approx. 1 day 1 hour 20 minutes

For the syrup, finely grate the ginger. Bring to a boil in a saucepan with the sugar, honey, and 250 ml water. Simmer over low heat for 1 hour. Allow the syrup to cool slightly. Then mix with lemon juice and 2.5 l water. Stir in the yeast until completely dissolved. Pour this mixture into bottles with swing-top lids and let stand at room temperature for 2-3 hours, then refrigerate. The fizzy drink will keep refrigerated for about 1 week. Be careful when opening, as it will release a lot of carbon dioxide.
