Spicy pastries with roasted almonds

Cream the butter until fluffy. Gradually stir in the sugar, vanilla sugar, gingerbread spice, and salt. Combine the flour and cornstarch, sift, and knead into the butter mixture along with the ground almonds. Pass the dough through a meat grinder fitted with a biscuit cutter attachment and place the cookies on a baking sheet lined with baking paper. Bake at 180°C (top/bottom heat) for about 12 to 15 minutes. For the half-cooled biscuits, combine the remaining sugar and gingerbread spice and sprinkle over the biscuits.
