Gingerbread muffins

Ingredients for 1 servings:

  • 100 g margarine (half-fat margarine)
  • 100 g sugar
  • 2 eggs
  • 110 ml milk (1.5% fat)
  • 1 pinch of salt
  • 220 g flour
  • 2 tsp baking powder
  • 100 g almond sticks
  • 15 g gingerbread spice
  • e.g. cake icing (chocolate icing)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Beat the egg yolks with margarine, sugar, salt, and milk until frothy. Combine the flour and baking powder and add in portions. Then stir in the almonds and gingerbread spice. Finally, beat the egg whites until stiff and gently fold in. Pour the batter into twelve muffin cups. Bake in a preheated oven at 180°C (top/bottom heat) for 20-25 minutes. Top with chocolate glaze, if desired.
