Ingredients for 1 servings:
- 250 g flour, gluten-free light
- 1 tsp psyllium husk
- 1 tsp salt
- 10 g yeast, fresh
- 1 tsp sugar
- 1 tbsp olive oil
- 200 ml water
- Sesame, poppy seeds or coarse salt
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
Put the flour in a bowl, add the psyllium husks and salt, and mix. Make a well in the center and crumble the yeast into it, sprinkle the sugar over it, and add 1/3 of the lukewarm water. Using a spoon, mix the yeast with the water. After a few minutes, add the oil and the remaining water. Knead everything into a smooth dough that pulls away from the bowl. Roll out the dough on a floured silicone mat into a rectangle approximately 20 x 30 cm. Cover and let it rest for 10 minutes. Then, using a sharp knife, cut into strips approximately 1 cm wide. Sprinkle a baking sheet with sesame, poppy seeds, or coarse salt, twist the dough strips into a spiral, and place them on the baking sheet. Spray with water and sprinkle again. Preheat the oven to 220 degrees Celsius (fan) and bake the grissini for 12 to 15 minutes until golden brown.
