Gluten-free waffles with apple

Ingredients for 1 servings:

  • 2 eggs
  • 80 g sugar, possibly brown sugar
  • 80 g butter
  • 150 g flour mix, gluten-free
  • ½ apple
  • some carbonated mineral water, as needed

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

for approx. 5 waffles

Separate the eggs. Beat the egg whites until stiff. Combine the egg yolks with the sugar and softened butter. Add the flour mixture. Finely grate half an apple and add it as well. Add a little mineral water to the batter. Then fold in the beaten egg whites. Pour about 2 tablespoons of the batter into the hot waffle iron and bake until golden brown. If the batter is still too thick, stir in a little more mineral water. I bake about 5 heart-shaped waffles with this amount of batter. Sprinkle the waffles with powdered sugar, if desired, or enjoy with compote.
