Gnocchi casserole with zucchini, cooked ham and tomato

Ingredients for 3 servings:

  • 500 g gnocchi
  • 1 onion(s)
  • 2 m.-large zucchini
  • 100 g cooked ham
  • 40 g butter
  • 2 tbsp flour
  • 500 ml vegetable stock
  • 100 g cream cheese
  • 150 g tomatoes, chopped or pureed
  • Salt
  • pepper
  • chili
  • ½ bunch parsley
  • 200 g cheese, grated, e.g. Emmental

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Sauté the onion in the butter until translucent, then add the flour and stir. Deglaze with the vegetable stock, stirring with a whisk. Bring to a boil and stir until no lumps remain. Add cream cheese, salt, pepper, and chili to taste and simmer briefly. Chop the zucchini, cooked ham, and parsley and place them in a baking dish with the gnocchi and tomatoes. Pour the sauce over the onion and sprinkle with the grated cheese. Bake in a preheated oven at 200°C for 25-30 minutes.
