Gnocchi with chanterelles and pesto

Ingredients for 2 servings:

  • 500 g gnocchi (ready-made product from the refrigerated section)
  • 200 g chanterelles
  • 100g pesto
  • some oil for frying
  • 1 tbsp butter for frying
  • some salt
  • some parsley, fresh

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Clean the chanterelles and chop them as desired. Wash and dry the parsley, then chop the leaves. Fry the chanterelles in a little oil with 1 tablespoon of butter and add salt to taste. Cook the gnocchi in boiling salted water according to the package instructions, then drain well in a sieve. Add the drained gnocchi to the mushrooms in the pan and cook for about 3-4 minutes, turning occasionally. Remove the pan from the heat and stir the pesto into the gnocchi. Arrange the gnocchi on plates and serve sprinkled with chopped parsley.
