Ingredients for 2 servings:
- 80 g gooseberries
- 250 g low-fat curd cheese
- 4 tbsp buttermilk
- 1 lemon(s), organic, including peel and juice
- 25 g sugar

Whisk the low-fat quark with the buttermilk, lemon juice, grated lemon zest, and sugar until smooth and pour into small jars. Clean and wash the gooseberries and place them on top of the lemon curd.
