Ingredients for 4 servings:

  • 4 spring onions
  • 250 g mushrooms, fresh
  • 4 slices of brown bread
  • 3 tbsp oil
  • 4 tomatoes
  • 400 g chicken schnitzel
  • 125 ml cream
  • 125 ml water
  • 1 tsp instant chicken broth
  • 100 g cheese, grated
  • 3 tbsp sauce thickener, light
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the spring onions, mushrooms, and chicken. Heat the oil and brown the meat. Add the spring onions and mushrooms and season with pepper. Deglaze with water and cream and bring to a boil briefly. Then stir in the stock and gravy thickener and bring back to a boil. Season with salt, if desired. Toast the bread slices, trimming off the crusts first, as they can become very crispy during baking. Place the bread on a baking tray lined with parchment paper. Slice the tomatoes, fry briefly in oil, and spread them on the bread slices. Spread the ragù on top and sprinkle with cheese. Bake in a preheated oven (220°C/425°F top/bottom heat, 200°C/400°F fan oven) for about 5 minutes until golden brown.
