Gourmet – Toast with pork loin

Ingredients for 4 servings:

  • 8 slices of toast
  • 8 slice(s) ham, cooked
  • 1 small pork fillet(s) (pork loin)
  • 250 g mushrooms, freshly sliced
  • 50 ml cream
  • 100 ml broth
  • 8 slices of cheese (Gouda or Emmental)
  • some oil
  • a few stalks of chives
  • some pepper
  • possibly sauce thickener

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pork loin into slices about 1.5 cm thick and season with salt and pepper. Heat a little oil in a pan and briefly fry the loins on both sides over medium heat. Remove the meat from the pan and fry the mushrooms in the pan until all the liquid has evaporated. Pour in the stock and cream and season with salt and pepper. If desired, add a little sauce thickener to thicken. Finely chop the chives and mix them into the mushrooms. Toast the bread in the toaster until light brown and top each slice of toast with a slice of ham. Arrange the pork medallions on the slices of toast and cover with the mushrooms. Place the cheese on top and bake the toast in the oven at 200 degrees Celsius until the cheese is bubbling. This also tastes great using hollandaise sauce instead of cheese.
