Grandma Milli's potato salad

Ingredients for 4 servings:

  • 750 g potatoes
  • 4 portions of fish fillet(s) (matjes)
  • 2 onions
  • 4 apples, sour
  • 2 cucumber(s), sour
  • 200 g mayonnaise
  • 2 tbsp cream
  • 4 tbsp cranberries, from the jar
  • 1 pack of capers
  • 1 bunch of dill
  • Mustard, hot
  • Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

With matjes and cranberries

Cook the potatoes until al dente, peel, and let cool. Then slice or dice them and place them in a large bowl. Dice the onions, apples, and cucumbers and add them. Tear the dill into the bowl, cut the herring fillets into bite-sized pieces, and add them to the potatoes along with the capers. Then mix the mayonnaise (or light salad dressing) with the cranberries, cream, and a little mustard, pour over the salad, and mix well. Season with mustard and salt. The salad should marinate for at least 3 hours, but preferably overnight.
