Grandma's meatballs in tomato sauce

Ingredients for 4 servings:

  • 500 g sausage meat or meatloaf meat
  • 2 eggs
  • 50 g breadcrumbs
  • 1 liter meat broth or vegetable broth
  • 30 g butter
  • 30 g flour
  • 1 tube(s) Tomato paste
  • e.g. salt and pepper
  • n. B. sugar
  • e.g. lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Make a smooth batter from the sausage meat, eggs, and breadcrumbs. (This takes time.) Bring the stock to a boil in a saucepan, scoop out the sausage meat with two teaspoons, and add it to the stock. Let it simmer for about 15 minutes. Then drain, reserving the stock. Melt the butter in a separate saucepan. Stir in the flour and sauté until lightly browned, stirring constantly. Deglaze with the stock using a whisk, stirring constantly, reduce slightly, then add the tomato paste and mix everything well. Season to taste with pepper, salt (very sparingly), a pinch of sugar, and a little lemon juice. Add the dumplings to the tomato sauce. We always serve this with rice and a green salad.
