Granola Ginger Cookies

The perfect granola ginger cookies recipe with a picture and simple step-by-step instructions.

  • 200 g Flour
  • 1 Msp Baking powder
  • 125 g Margarine or softened butter
  • 2 tsp Finely grated ginger
  • 1 packet Vanilla sugar
  • 4 tbsp Maple syrup
  • 2 Pc. Eggs
  • 130 ml Milk
  • 150 g Organic crunchy muesli with fruit or chocolate
  • 2 tbsp Candied pineapple or cranberries
  1. Mix the flour and baking powder. Add the ginger, margarine, vanilla sugar, maple syrup, eggs and milk and mix into a batter with the whisk of the hand mixer.
  2. Cut the candied pineapple into large pieces and add to the dough with the crunchy muesli. If you use cranberries, you can leave them whole. Stir in briefly. Place 6 piles on each of two baking sheets lined with baking paper and smooth out. Bake one after the other in the preheated oven on the middle rack for about 15 – 18 minutes at 200 degrees (or fan oven 175 degrees).
