Gratinated apples with marzipan and ice cream sauce

Ingredients for 4 servings:

  • 4 large apples
  • 1 lemon(s), unsprayed
  • 6 tbsp Calvados
  • 2 tsp vanilla sugar
  • 500 ml ice cream (vanilla)
  • 200 g marzipan – raw mass
  • 80 g powdered sugar
  • Mint, for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash, halve, and core the apples. Zest and squeeze the lemon, then bring the zest and juice to a boil with the Calvados and vanilla sugar. Add the apple halves and simmer for about 5 minutes. Remove the apples from the liquid and place them in a baking dish. Reduce the liquid by about half. Thaw the ice cream. Mix the marzipan with the powdered sugar and about 3 tablespoons of the liquid until it forms a pipeable mixture. Fill the apple halves with the filling using a piping bag and gratinate the apples under a preheated grill. Mix the ice cream and serve with the apples. Garnish with mint. An alternative to Calvados is cider, or for a non-alcoholic alternative, apple juice.
