Greek garlic chicken

Ingredients for 4 servings:

  • 1 chicken (approx. 1500 g)
  • salt and pepper
  • 5 lemons (1/8 l lemon juice and 1 lemon slices)
  • ⅛ liter olive oil
  • 5 bulbs of garlic
  • 1 kg potatoes, small
  • 3 sprigs rosemary
  • Sage leaves
  • basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Divide the chicken into 8 pieces, rub with salt and pepper, and arrange skin-side up on a deep baking tray. Combine lemon juice and an equal amount of olive oil in a shaker, season with salt, and shake vigorously. Pour this marinade over the chicken pieces. Brush the potatoes clean under running water and arrange them around the chicken on the tray. Place rosemary sprigs and sage leaves between the pieces. Halve the unpeeled garlic bulbs crosswise and arrange cut-side down around the chicken. Drizzle the remaining marinade over all the ingredients. Cover the pieces of meat with the lemon slices. Roast the chicken at 220°C for 45-60 minutes. Sprinkle with finely chopped basil before serving. Serve with a green salad.
