Ingredients for 4 servings:
- 900 g potatoes
- 100 ml lemon juice
- 50 ml olive oil
- 100 ml water
- 3 cloves garlic
- Salt
- pepper
- 2 tsp oregano

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
Peel the potatoes, cut them into eighths, and place them in a large ovenproof dish. Drizzle with lemon juice, olive oil, and water. Sprinkle with the chopped garlic cloves, oregano, salt, and pepper. Bake uncovered in a preheated oven at 200°C on the top rack for about one hour, until the potatoes are crispy brown. Stir occasionally during baking, adding a little water if necessary.
