Ingredients for 6 servings:
- 1 large potato(s), peeled
- 1 large onion(s)
- 500 g minced meat (beef or lamb)
- 1 tbsp vinegar (red wine vinegar)
- 1 tbsp tomato paste
- 1 egg(s)
- 50 g breadcrumbs
- 1 tsp oregano, dried
- 2 tbsp flat-leaf parsley, coarsely chopped
- ½ tsp white pepper, freshly ground
- Salt
- 50 g flour
- 80 ml olive oil
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Coarsely grate the potato and onion and place in a bowl. Add the minced meat, vinegar and tomato paste, the beaten egg, breadcrumbs, herbs, and pepper. Season with salt to taste. Knead for three minutes until well blended. Cover with foil and refrigerate for one hour. Scoop out portions with a tablespoon, roll into balls, flatten, and pinch the ends. Coat in flour. Heat the oil in a pan. Fry the balls, one at a time, over medium heat on both sides until golden brown (about 3 minutes). When cooked through, carefully lift them out of the pan, drain on kitchen paper, and keep warm until ready to serve.
