Ingredients for 4 servings:
- 1 cucumber(s)
- 200 g Greek yogurt
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar, light
- 1 bell pepper(s), red
- 1 lemon(s)
- 1 spring onion(s)
- 5 olives
- 1 clove(s) garlic
- some dill, fresh
- salt and pepper
- 1 tsp, levelled sugar
Instructions
Working time approx. 20 minutes; Rest time approx. 10 minutes; Total time approx. 30 minutes
Simply
Peel, halve, and deseed the cucumber. Slice it into a bowl using a cucumber slicer and toss with a little salt. Let it rest for 5 minutes. Dice the bell pepper, thinly slice the spring onions and olives, and add both to the bowl. Toss with Greek yogurt, a little lemon juice, olive oil, balsamic vinegar, and a crushed garlic clove. Season with salt and pepper and serve sprinkled with freshly chopped dill. Add a pinch of sugar, if desired.
