Greek-style white bean salad

Ingredients for 4 servings:

  • 2 jars of beans, large white, 250 g each
  • 1 can corn, 285 g
  • 2 onions, red
  • 1 bunch of flat-leaf parsley
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 3 tbsp lemon juice
  • 5 tbsp olive oil
  • Salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Drain the beans and corn. Peel the onion and slice it into strips. Pluck the parsley leaves from the stems, wash them, pat them dry, and chop them. Halve the bell peppers, remove the seeds and cores, then rinse and dice them. Mix the lemon juice and oil. Season with salt and pepper. Combine the prepared ingredients in a bowl. Pour the sauce over the peppers.
