Ingredients for 4 servings:
- 2 tbsp olive oil
- 2 garlic cloves, chopped
- 2 onions, chopped
- 200 g mushrooms, sliced
- 200 g zucchini, sliced
- 1 bunch parsley, chopped
- pepper, black
- Salt
- Thyme, chopped
- Oregano, chopped
- 50 ml vegetable stock
- 2 tomatoes, peeled and sliced
- 6 olives
- 4 tbsp crème fraîche
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Pour the olive oil into a pan. Sauté the garlic cloves and onions. Add the sliced mushrooms and zucchini one at a time and fry each for about 3 minutes. Season to taste with salt, thyme, and oregano. Add the parsley and vegetable stock and sauté in the covered pan for about 10 minutes. Then add the peeled and sliced tomatoes and sauté for another 2 minutes. Finally, stir in the olives and crème fraîche. Season to taste. Serves well with rice or baguette.
