Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 2 garlic cloves, chopped
  • 2 onions, chopped
  • 200 g mushrooms, sliced
  • 200 g zucchini, sliced
  • 1 bunch parsley, chopped
  • pepper, black
  • Salt
  • Thyme, chopped
  • Oregano, chopped
  • 50 ml vegetable stock
  • 2 tomatoes, peeled and sliced
  • 6 olives
  • 4 tbsp crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pour the olive oil into a pan. Sauté the garlic cloves and onions. Add the sliced ​​mushrooms and zucchini one at a time and fry each for about 3 minutes. Season to taste with salt, thyme, and oregano. Add the parsley and vegetable stock and sauté in the covered pan for about 10 minutes. Then add the peeled and sliced ​​tomatoes and sauté for another 2 minutes. Finally, stir in the olives and crème fraîche. Season to taste. Serves well with rice or baguette.
