Green asparagus with fresh wild garlic from the pan

Ingredients for 4 servings:

  • 400 g asparagus, green
  • 1 onion(s), finely diced
  • 4 leaves of wild garlic, cut into fine strips
  • 100 ml vegetable stock
  • e.g. pepper, salt
  • 1 pinch(s) of sugar
  • some lemon peel, grated, untreated
  • 2 tbsp butter

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the bottom end of the asparagus and trim about 2 cm from the end. Wash the asparagus and pat dry. Sauté the onion and a little lemon zest in butter in a non-stick pan until translucent, then add the asparagus and wild garlic. Sauté everything for about 5 minutes, stirring constantly. Add the vegetable stock and a pinch of sugar and simmer for another 5 minutes over medium heat. Season with salt and pepper. If you like, you can drizzle a little more butter over the asparagus. It also tastes great with a little shaved Parmesan cheese, depending on what you’re eating it with.
