The perfect green bean soup with oxtail … recipe with a picture and simple step-by-step instructions.
- 1 Diced onion
- 2 tablespoon Extra virgin olive oil
- 3 Potatoes
- 2 Carrots
- 500 ml Asparagus cooking stock from frozen storage
- 3 Leaves dated Cabbage
- 150 g Green beans
- 2 Branches Savory
- 1 branch Lovage fresh
- 600 ml Oxtail broth with frozen meat **
- Salt
- Black pepper from the mill
- Peel the potatoes and carrots and cut them into cubes; Cut the pointed cabbage leaves into patches and the beans into 4 cm pieces. Strip the savory leaves from the stalks and chop them with the lovage.
- Let the onion cubes become translucent in the heated oil, then briefly sauté the carrots, add the potatoes and asparagus sauce and bring to the boil. Simmer with the lid on over a mild heat for about 10 minutes.
- Now add the pointed cabbage with the beans and the finely chopped herbs (savory and lovage) to the soup, add the oxtail broth through a sieve and cook for another 10 to 15 minutes.
- Season with pepper and salt to taste, add the meat to the soup to heat it up and serve. Enjoy your meal! .
