Green chili sauce for BBQ dishes and burgers

Ingredients for 3 servings:

  • ½ white onion
  • ¼ tsp cumin
  • 1 pinch of salt
  • 1 garlic clove(s)
  • 2 tbsp jalapeño(s), from the jar
  • 130 ml water
  • 60 ml apple cider vinegar
  • 4 tbsp olive oil

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 30 minutes

Heat the olive oil in a sauté pan or small saucepan. Slice the onions into strips about 5 mm wide. Once the oil is hot, add the onions, cumin, salt, and jalapeños to the sauté pan, mince in the garlic, and cook for 3-4 minutes, stirring well halfway through. Then add the water and reduce the heat for 20 minutes, stirring well halfway through. Once reduced, remove the sauté pan from the heat and let the mixture cool to room temperature. Once cooled, puree the mixture with an immersion blender, slowly adding the apple cider vinegar. Now you can bottle the sauce.
