Green spelt patties

Ingredients for 4 servings:

  • 1 onion(s), finely chopped
  • 2 carrots, finely grated
  • 1 stalk(s) leek, cut into fine strips
  • 1 tbsp butter or margarine
  • ½ liter of water, hot
  • 2 tsp vegetable broth, instant
  • 275 g green spelt, coarsely ground
  • 2 eggs
  • 120 g cheese (Gouda), finely grated
  • Parsley, finely chopped
  • salt and pepper
  • Mustard
  • Tomato paste
  • little water for steaming

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat the butter and sauté the diced onions until translucent. Add the carrots and leeks, cover, and sauté with a little water over very low heat for about 5 minutes. Pour in 1/2 liter of water. Once the water boils, stir in the vegetable stock and green spelt. Stir until the porridge just boils. Then remove from the heat and let cool slightly. Stir in the eggs, parsley, and Gouda cheese. Season with salt, pepper, mustard, and tomato paste. Form small patties and fry on both sides in oil or butter over medium heat. It’s a great side dish with salad or vegetables. It’s a good alternative to a hamburger for vegetarians.
