Ingredients for 4 servings:

  • 150 g soybean pulp (okara)
  • 100 g green spelt, crushed
  • 20 g flaxseed
  • 2 onions, mashed
  • 1 tsp pepper
  • 1 tsp paprika powder, hot
  • 1 tsp mustard seeds, ground (yellow)
  • ½ tsp salt
  • 1 tbsp marjoram
  • 1 tbsp olive oil
  • vegetable broth

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Mix everything together, adding just enough vegetable broth until the batter is smooth. Pour into a rectangular silicone mold (e.g., for a king cake), let it rest for 3 hours, preheat the oven, and bake the roast for 1 hour at 200°C. Okara is the soybean pulp that remains during the production of soy milk. It is high in protein and fiber. A mushroom sauce goes well with this dish.
