Ingredients for 2 servings:

  • 1 endive salad (1/4 of it)
  • 250 g lamb’s lettuce
  • ½ onion(s)
  • 1 tbsp apple cider vinegar
  • 1 ½ tbsp olive oil
  • 1 tsp powdered sugar
  • 1 tsp lemon juice
  • 1 handful of pumpkin seeds
  • salt and pepper
  • Salad herbs

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Endive with lamb’s lettuce

Halve and quarter the endive. Cut one quarter into thin strips. Clean the lamb’s lettuce florets. Toss both lettuces in cold water and drain well in a sieve. Set aside. Finely dice the onion and mix well with the vinegar, oil, and all the other seasonings. Season to taste, adding a splash of water if desired. Just before serving, place the drained lettuce in a large salad bowl, carefully pour the dressing over it, and toss to combine.
