Ingredients for 30 servings:

  • 900 g flour, type 550
  • 100 g flour, type 1150
  • 20 g salt
  • 10 g margarine
  • 5 g sugar
  • 40 g yeast
  • 600 g water, cold
  • 80 g ham, diced
  • 10 g caraway seeds

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Dissolve the yeast in water, then make a smooth dough with salt, sugar, margarine, and flour. Finally, fold in the ham and caraway seeds. Let the dough rest for 2 x 30 minutes. Weigh out approximately 30 pieces of 50g each, shape into rounds, and let rest for 10 minutes. Roll the round pieces into logs with the palm of your hand, place on a greased baking sheet, brush with water, and sprinkle with coarse salt and caraway seeds. Bake at 210°C (425°F) for approximately 12 minutes until 3/4 cooked. Let the logs cool and finish cooking on the grill in the evening. Good luck.
