Grilled char or trout

Ingredients for 4 servings:

  • 4 fish(s) (char or trout), gutted and washed
  • 2 liters of water
  • 140 g salt, or sea salt
  • 1 handful of flat-leaf parsley, chopped
  • 1 handful of thyme, fresh, chopped
  • 1 tbsp freshly ground pepper
  • 3 tbsp lemon juice

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 40 minutes

Mix water and all other ingredients to make a brine. Marinate the washed fish in it for 24 hours in the refrigerator. To grill, place the fish on a fish grill rack and grill on a hot grill for about 15-20 minutes per side (depending on the size), turning frequently. The fish doesn’t need to be seasoned any further, as the brine has imparted a wonderful flavor.
