Ingredients for 4 servings:
- 2 thick zucchini
- 4 tbsp olive oil, good
- Herbs, Italian, fresh, e.g. thyme, oregano
- Paprika powder
- Sea salt and pepper

Slice the zucchini either lengthwise or slightly diagonally so they don’t fall through the grill. Place the zucchini in an airtight bag. Spread the oil and seasonings over the zucchini. Seal the bag and shake well. Let it sit overnight, preferably in the refrigerator. Grill the zucchini for 2-3 minutes on each side, depending on the thickness of the slices, until golden brown. Feel free to play with the seasonings, adding garlic or parsley to your heart’s desire. Just be careful, though; the herbs quickly become bitter in the heat.
