Grisons Wedding Soup
The perfect grisons wedding soup recipe with a picture and simple step-by-step instructions.
- 100 g Barley barley (coarse barley)
Cut into cubes:
- 3 Piece Carrots
- 0,25 Piece Celery
- 1 Piece Leek
- 1 Piece Onion
- 2 Piece Bay leaves
- 1 tbsp Flour
- 3 dl Cream
- 1 Piece Egg
- 500 g Smoked pork belly
- 1 rifle Red Indian beans
- Fat, bouillon, salt and pepper
- Soak the barley in the fat, add the vegetables and blanch, dust with the flour and deglaze with the bouillon. Add the bacon and let simmer for approx. 1 – 1/2 hours. Before serving, remove the bacon and cut into small cubes, return to the soup. Mix with the cream and the egg, (do not cook anymore)
