Grisons Wedding Soup

The perfect grisons wedding soup recipe with a picture and simple step-by-step instructions.

  • 100 g Barley barley (coarse barley)

Cut into cubes:

  • 3 Piece Carrots
  • 0,25 Piece Celery
  • 1 Piece Leek
  • 1 Piece Onion
  • 2 Piece Bay leaves
  • 1 tbsp Flour
  • 3 dl Cream
  • 1 Piece Egg
  • 500 g Smoked pork belly
  • 1 rifle Red Indian beans
  • Fat, bouillon, salt and pepper
  1. Soak the barley in the fat, add the vegetables and blanch, dust with the flour and deglaze with the bouillon. Add the bacon and let simmer for approx. 1 – 1/2 hours. Before serving, remove the bacon and cut into small cubes, return to the soup. Mix with the cream and the egg, (do not cook anymore)
