Ingredients for 1 servings:

  • 500 g flour
  • 2 tsp baking powder
  • 2 tsp cinnamon powder
  • 1 tsp ginger powder
  • ½ tsp nutmeg
  • ½ tsp salt
  • 280 g brown sugar
  • 230 g butter, room temperature
  • 4 eggs
  • 425 g pumpkin flesh (pumpkin puree)
  • 175 g nuts (pecans), chopped
  • Paper cups

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Preheat the oven to 180°C. Line a muffin tin with paper baking cups and set aside. In a medium bowl, combine the brown sugar and butter until well blended. Add the eggs, one at a time, beating thoroughly each time. Next, stir in the pumpkin puree, which may appear slightly curdled. Whisk in the flour mixture, then stir in the pecans with a whisk (not a hand mixer). Spoon the batter into the muffin tins and bake at 180°C for about 35 minutes.
